Golden Pumpkin Coconut Soup with Tofu


Tofu usually sits in my fridge and stares at me. I buy it with good intentions, then forget what I planned to do with it. But this week, with a few pumpkins from the garden and a chilly evening settling in, I decided to give it a purpose.

I sliced a small pumpkin in half, scooped out the seeds (they never go to waste — toss them with olive oil and salt and roast until crisp), and set the halves to roast. Once soft, the flesh became the base for this golden, fragrant soup that feels like autumn in a bowl.

Ingredients


  • 2 cups fresh pumpkin purée (from roasted pumpkin halves)

  • 1 block tofu, cubed

  • 1 tbsp coconut oil or olive oil

  • 2 cloves garlic, minced (or ½ tsp garlic powder)

  • 1 tsp dried ginger (or fresh, grated)

  • 1 tsp turmeric

  • 1 tsp curry powder or ½ tsp each cumin + coriander

  • 2 cans coconut milk

  • 2 cups vegetable broth (or water + ½ tsp salt)

  • Salt and pepper, to taste

  • Optional: dash of lime juice for brightness

Method


  1. Prepare the pumpkin: Cut in half, scoop seeds (set aside to roast), and bake until tender.

  2. Sauté and spice: In a large pot, warm coconut oil. Add garlic, dried ginger, turmeric, and curry powder.

  3. Add the tofu: Toss in cubed tofu, letting it brown slightly in the spices.

  4. Combine: Add the roasted pumpkin, coconut milk, and broth. Stir well and bring to a gentle boil.

  5. Blend: Use an immersion blender right in the pot until creamy and smooth.

  6. Taste and finish: Season with salt, pepper, and a squeeze of lime.


The result is a silky, golden soup that’s both comforting and light with enough protein from the tofu to make it a meal.
