Curried Butternut Squash Soup with Apple

Ingredients


  • 1 tablespoon ghee

  • 4–5 cups frozen or freshly roasted butternut squash

  • 3 small onions, chopped

  • 2 apples, peeled and chopped

  • 1–2 tablespoons curry powder (to taste)

  • 7 tablespoons bouillon paste

  • 8 cups water


Instructions


In a large soup pot, melt the ghee over medium heat. Add the butternut squash, onions, and apples. Sauté for several minutes until everything softens and becomes fragrant. Next, stir in the curry powder and bouillon. Then, pour in the water and bring it to a gentle boil. Simmer for 15–20 minutes, until the vegetables and apples are tender.


Blend the mixture until smooth using an immersion blender, or blend in batches in a traditional blender. Serve warm. Consider garnishing with seaweed flakes for added flavor and nutrition.
